3 T minced onion
3 T finely chopped green pepper
3 T butter
3 T flour
2 c milk
1 c smoked ham-chopped
1 T chives
1/8 t paprika
Melt butter in skillet over medium heat and saute the onion and pepper til lightly coloured.
Sprinkle in flour and stir for 2 minutes.
Add the milk until thoroughly mixed in, then add ham, stirring til thickened.
Season with paprika and chives.
Serve over hot corn bread, or toasty buttered English muffins.
