ONION PIE
2 large, Vidalia or Bermuda onions
3 eggs, well beaten
1/4 C. butter
1/8 tsp. pepper
Parmesan cheese and paprika
8-in. pie shell, unbaked
1 C. sour cream
1/4 tsp. salt
1/4 tsp. ground cayenne pepper
Pre-heat oven to 425F
Peel onions. Cut each in half, then cut crosswise, then sliced as thin as you can get them.
Melt butter in large saucepan and saute' onions until limp; do not allow to brown.
Combine sour cream and eggs in bowl. MIX WELL!!!
Add onions, salt, pepper, and cayenne.
Pour into pie shell.
Sprinkle generously with Parmesan cheese, then lightly with paprika.
Bake for 20 min.
Reduce heat to 325 ºF and bake 20 min. longer.
