Chili Con "Corny"

Chili Con "Corny"

1/2 lb bacon, sliced
1 & 1/2 c Onion; chopped
2 TBL Garlic; minced
1/2 c plus 1/4 c Chili powder
3 TBL Ground cumin, divided
1/2 tsp New Mexico Chili powder, more or less
2 (15-oz)cans Diced Tomatoes w/chillies, with juice
1 1/2 c Beef stock, or canned broth
2 c Corn kernels, fresh or frozen
1 (15 oz) can dark Kidney beans, drained and rinsed
1 (15 oz) can Pinto Beans, Drained
1 (8 oz.) can Black Beans, with juice
4 Pickled Chili Peppers, thin-sliced, or to taste

Cook bacon in a small non-stick skillet till done, but not crisp. Remove and put on a paper towel to drain.
Cook onion in the bacon grease in the same skillet until soft; add garlic, 1/4 cup chili powder and 1 TBL cumin and cook 1-2 minutes more, stirring frequently.
Transfer to a large SaucePan, and add the cooked bacon.
Mix in tomatoes, beef stock, corn and beans and bring to boil.
Reduce heat.
Add remaining Chili Powder and Cumin (to taste) and simmer until thickened, stirring occasionally, about 30 minutes. Mix in cilantro.

(Can be made 1 day ahead. Let cool, Cover tightly and chill. Bring to simmer before serving, stirring frequently. )
