Fancy Green Beans
1 lb. fresh green beans
Chicken broth to cover
2 c. tomatoes, diced
1/2 c. chopped celery
1/4 c. chopped green bell pepper
1/2 tsp. onion powder
butter
Trim beans and cut down to bite-size;
In a 6-Qt. saucepan, Cook beans in chicken broth until tender, then add remaining ingredients and cook over medium heat until cooked through, about 15 minutes.
Drain, reserving liquid, and return to saucepan. Add butter and sit over low heat until butter is melted; stir gent;y to coat. Transfer to a serving
dish and add just enough of the reserved liquid to cover 2/3 of the beans.
Serves 8.
