For me what works is cooking down the steak and kidney in a slow cooked stew fashion...brisket works best for me on this...the longer the better with plenty of pepper,and a can of good old strong Ale in the pot...4 hours min and cooled for another 12 hours min...any extra juice best saved for gravy.

The rest is all in the pastry.

Glad to have you here. Welcome back.

That sounds absolutely delish, especially the ale part. I use beer in my corned beef and cabbage and out adds a lot.
