Grilled Salsa Verde

6 Large or 10 medium tomatillos
2 Anaheim peppers halved, seeded
2 Jalapenos halved, seeded
2 cloves garlic peeled
1 large onion sliced 1/2" thick
juice of 1 lime
handfull of cilantro
2 -3 Tbsp olive oil
1/2 tsp cumin
S&P to taste.

Toss veggies in a drizzle of olive oil and season with salt and pepper. I use a basket but they can be placed directly on to a medium/high grill. (Skewering the onions and garlic is recommended if not using a basket). Cook about 4-5 minutes/side. Transfer veggies to a food processor. Add lime, cumin and cilantro. Buzz and drizzle in olive oil. Serve over tortilla chips with refried beans and cheese that have been microwaved. A dallop or two of sour cream is a nice finish!
