Sweet Garlic Cashew Chicken Tenders w/pictures

i was craving something sweet so this is what i came up with

this was for 4 adults and 1 child

12-15 frozen chicken tenders - thawed
1/2 cup unsalted broken cashew pieces
1/3 cup soy sauce
3/8 cup honey
1/8 cup sugar
1 small onion - minced
2 spring onions - sliced for garnish
6-12 cloves of garlic (depends how garlicky you want it..lol) - minced
1/3 cup water
1 tablespoon good dark rum
S&P to taste
cornstarch for thickening(if u wish,i didnt thicken it)

in a big skillet fry the tenders in a little oil or cooking spray.

in a small skillet toast cashews.

in another pot, fry the onions until soft, add garlic. cook but do not brown either.

add soy,water,sugar,honey and rum. simmer for 15 minutes.

after chicken is cooked, put into the pot with the sauce mixture and simmer for an additional 10 minutes

just before you are ready to serve, put toasted cashews into mixture.

That looks good, Jeff.
How much does the rum add to the sauce? Can you think of any substitute? I'm not a fan of rum. Well, maybe Capt Morgan's (lol).

yup you can add bourbon... then its like bourbon chicken you get at your local mall chinese place..

you can taste the rum in the flavor but it doesnt overwelm it. i dont much care for rum either unless i am cooking with it or adding it to one of my hot sauces
