Sweet potatoes with eggs and green beans

Ingredients

1 Tbsp olive oil
1 medium sweet potato, diced
1/4 tsp garlic powder
1/4 tsp chili powder
1/4 tsp cumin
1/4 tsp paprika (I use smoked)
Generous pinch of salt
Several grinds black pepper
Salt
Pepper
Steam-in-bag green beans
4 eggs, fried or poached

Instructions

Heat oil over medium-high heat in a large pan.
Place sweet potatoes in a small sandwich bag and add dried spices - shake to coat well.
Empty the bag into the pan and cook for 8-10 minutes, stirring occasionally, unti. potatoes are fork-tender and nicely caramelized.
Steam the green beans and prepare the eggs, as desired, while potatoes are cooking.
Serve in the potatoes and green beans topped with eggs.
And try not to stab anybody, 'mkay?

Yields: 2 servings

Per the recipe, I'll be using fresh green beans from the supermarket.

I'm trying to put some healthier fare back into my diet.
I love everything in that dish.
I'll make it tonight or tomorrow.

I zapped the produce people at Giant yesterday - big bin of loose green beans - I reminded the clerk there's a reason they're called "snap beans" and not "bungee cord beans"

Indeed, Chowdah.
I made my own changes.

I boiled the sweets for about 7 minutes til I could pierce them with a fork.
Drained, then in the pan with oil and stirred til they started to turn colour on med-high.
I was afraid they'd mush.
They were fine with just doing that.

I did not shake them in the seasonings, but rather sprinkled bits of each as I cooked them. Shoved them to the side and added the fresh beans that were steamed first as well, then stirred for about 3 minutes.

I liked the flavour and the nice colour to this dish.
Pretty darn tasty.
Went with fried egg instead of poached.
I'll make this again.
