Creamy Cauliflower Soup

We're going to be serving a selection of hearty soups and stews for all the ski bunnies at the hotel tonight and these are a couple of my contributions to warm up the soul on a cold night. This lovely, creamy soup and the Shepherd's Stew I posted earlier are popular favorites with folks:

1 medium head of cauliflower, cut in bite-sized pieces
1/4 cup butter
2/3 cup chopped onion
2 tbls. all-purpose flour
2 cups chicken broth
2 cups half and half
1/2 tsp. Worcestershire sauce
salt to taste
1 cup grated cheddar cheese
chopped parsley

Cook cauliflower in boiling, salted water. Drain, reserving water. Melt butter and add onion, cooking until tender. Blend in flour, add broth and stir constantly until mixture comes to a boil. Stir in 1 cup liquid drained from cauliflower (add water if necessary to make 1 cup), half and half, Worcestershire sauce and salt. Add cauliflower. Heat to boiling. Stir in cheese. Let soup cool slightly, then cream with an immersion blender until soup is completely free of any lumps. Serve garnished with parsley and a sprinkle of paprika. This soup is wonderful served with a tomato bruschetta or cheesy garlic bread slices on the side. :mrgreen:
