Chicken Breast Pannini

2 nine inch whole wheat tortilla shells
1 cooked season chicken breast, I used hot and spicy grill chicken seasoning, salt and pepper.
Slice chicken into thin strips.
2 tbsp diced banana peppers
2 tbsp diced roasted red pepper
1 tbsp diced onion
1/4 c fresh grated Parmesan cheese
4 tbsp sauteed mushrooms

Add all loose ingredients in bowl till well combined

divide between two tortillas
fold in all sides to completely cover
place on heated pannini press until the cheese melts

Serve with a mayo/lime juice/hot sauce drizzle.

I just tried it and it was very good.
Thinking of alternatives!!!

CC, what I loved the most about it was using the tortilla, it sealed it and wasn't like eating a wrap sandwich. It held together and came out very nice looking.

They used to carry avocado tortillas, as I recall. Here are a few more flavors to play with:
