Prawn Saganaki

4 Vine Tomatoes (large) chopped
can of Cherry tomatoes in juice
good handful fresh parsley, chopped
1 large onion, chopped finely
2 cloves garlic, crushed
1 block good feta cheese
3 tbsp olive oil
1/2 glass of dry white wine
1/2 tsp ground nutmeg
1/2 tsp caster sugar
pack of peeled prawns (small prawns work better)
fine sea salt and crushed black pepper

Preheat oven to 180oc. Heat a large pan and warm the olive oil. Saute the onions for roughly 7 minutes until soft and lightly golden brown (not dark!).

Add parsley, garlic, nutmeg and sugar and stir well.

Add chopped tomatoes and tinned tomatoes and stir mixture. Turn heat down to a simmer. Cook for roughly 20-25 minutes until liquid is absorbed and the sauce is thicker. Season with salt and pepper.

Add wine and simmer again until liquid is absorbed.

Season to taste again. Remember not to make it too salty as feta cheese is salty too.

Add prawns and stir through.

Place mixture into an oven proof dish. Break up feta cheese in to pieces and sprinkle, stirring so the feta cheese is consistent through the sauce.

Place in middle shelf of the oven and cook for 10-15 minutes, check half way through and stir.

Put sauce into individual bowls and serve with crusty bread
