Default Skillet Cabbage

Skillet Cabbage

Serves 6 as a side dish.

"You can add apple
cider vinegar or soy sauce to change the flavor."

6 slices bacon
1 medium onion, chopped
3 ribs celery, finely chopped or sliced
1 head green cabbage, finely chopped, sliced or shredded
2 Tbsp. butter, optional
Salt and pepper to taste

In a very large frying pan or a Dutch oven, fry the bacon until it is
crisp; set aside on paper towels, leaving the bacon fat in the pan.
Add the onions and celery to the hot bacon fat and cook over medium-
high heat until they are at least a little browned (or more,
depending on your taste).

Stir in the cabbage, then the butter, if using. Cover and let the
cabbage cook down, stirring thoroughly several times, 10 to 15
minutes, until crisp-tender (or softer, to taste).

Crumble the bacon and stir it in, along with salt and pepper to
taste. Serve hot.

Oh, Lucky, this sounds heavenly, with the addition of bacon and onion! I will definitely do this! And I do like cider vinegar with cabbag.

But I love Sass' simple recipe of cabbage fried in butter/oil for a weeknight. I'll add a little fresh dill from my garden.

A couple of dashes of Habanero sauce was the only departure..
Oh, and I didn't crumble the bacon, for purposes of the image ....
