Not sure if it would impress anyone, but a while ago I made a pan fried tilapia fillet (in peanut oil) seasoned with Old Bay, a rice blend and a sweet potato.
I tried to dress it so I'd look as good as you all here with a slice on lemon and a green onion.
Maybe this is something I'd serve to someone if I wanted to impress them?
Dunno.

I don't cook pretty things... but, I can impress with taste.
A few of my favorites are
Roasted lamb shanks with veggies
Clam chowder
Bear or Venison stew
spinach salad
Persian rice with onions and barr berries
Braised lamb shanks with veggies in a tomato base.
and for dessert...

Peach cobbler with home made vanilla ice cream
or
coffee flavored creme burlee

Not all served at once lol!

It's been a while since I've checked in and I've missed this place.
But some really good looking meal all!
But Karen, please share with us the recipes for the shrimp tostados and the Chiles en Nogada!! They look great. I already copied your Albondigas and can't wait to try it.
I love authentic Mexican food.
