Gruyere and Black Pepper Popovers

I've been wanting to try these since I saw them on Diners, Drive-Ins, and Dives. They look delicious. This is Jodi Elliott's recipe. She and her husband own Foreign & Domestic Food & Drink in Austin, Tx.

2 cups whole milk
4 large eggs
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
2 cups all-purpose flour
2 ounces Gruyère cheese, cut into 16 small cubes, plus freshly grated cheese for garnish

I finally got around to tryng these. I don't have a popover pan, so I just used a muffin pan. They have a wonderful crunch factor straight from the oven, and that browned cheese :in_love:. They're light and airy and so easy to make. I'll make them again. I did forget the pepper :blush:.

They came out surprisingly good! And I don't bake....ever! lol I did add more salt and pepper than the recipe said. Next batch I'm going to garnish with parmesan.

Wow, you got a really nice pop on yours! The next batch I make, I'm going to remember the pepper and add a little more cheese.

I made these a couple times now. The last batch was 1/2 gruyere 1/2 parmesan. You can add whatever you want. I was even thinking broccoli and cheese or bacon and cheese, etc.

If you put something like broccoli in them, let us know how they come out, HC. I'm wondering if you'll get the same high pop.
