This is a simple recipe that I learned from my father. He often called it Hoe Bread although that name is more often used for "fry bread". The story he told was that during slavery, slaves were given these ingredients for their meal while working the fields. Having no other way to cook it, they would cook it on the hoes they used to work the fields. I have not been able to verify this account.

Use
Corn bread can be used in many ways. My father used it crumbled up in soups, in a class of Buttermilk, and with Honey or Sorghum Molasses in the place of biscuits.
INGREDIENTS
- 1 cup Self-Rising Corn Meal
- @1 cup Buttermilk
- 1 large egg
- 1 tbs Vegetable Oil
METHOD
- Mix Corn Meal, Egg, and Oil in a medium mixing bowl
- Gradually add the buttermilk. Do not over stir. It should pour but not runny... like pancakes. It will take almost 1 cup.
- Put into an iron skillet that has been heated in an oven set to 350F
- Place skillet back into the oven and cook for 30 minutes of golden brown.
