CrockPot Bean w/bacon Soup

6 ounces of bacon, diced
10 cups of chicken broth
3 cans (15 ounces each) Great Northern beans, drained
1 can (14 1/2 ounces) diced tomatoes, undrained
1 large onion, chopped
1 package (10 ounces) frozen sliced or diced carrots.
2 teaspoons minced garlic
1 fresh rosemary sprig or 1 teaspoon dried rosemary
1 teaspoon black pepper.

Cook bacon in medium skillet over medium-high heat until just cooked; drain and trasnfer to slow cooker. Add remaining ingredients.

cover; cook on LOW 8 hours or until beans are tender. Remove Rosemary sprig and mince the leaves before serving.


**TIP: Place slices of toasted Italian Bread in bottom of Individual bowls. Drizzle with olive oil. Pour soup over bread and serve.

Anything with bacon in the title gets my attention, LOL.
This is similar to what we had growing up as well, but with a ham hock and diced ham. Can't wait to try this one out!

i usually add the ham hock as well, but around where i live it is near impossible to find ham hocks unless i smoke them myself or Mrs.Bam goes shopping across the river in Sault Ste Marie,MI

Man I feel for ya... I guess we forget sometimes how lucky we are being right next to a large city with so many ethnic grocery stores, butchers, etc.
