Tuna Cakes

(No eggs in this recipe)

15 oz. canned tuna, drained

3 T mayonnaise
3 t lemon juice
1 c bread or cracker crumbs
2 T herbs
2 t Dijon mustard
¼ t garlic powder
½ t black pepper

Oil for frying
-----
Drain the tuna.
In separate bowl mix the other ingredients.
Add the tuna, mixing well.
Form into patties and fry in oil approx. 4 minutes per side.
Serve with tartar sauce.

I've already put the mixture for these together and have it chilling until dinner time.
I must say it held together quite well with just using the mayo,lemon juice ,mustard and no egg.
The recipe is spot on!
I did a taste test. It's fab!
Estimate it'll make 4 good sized ones.

By the way, I made my own tartar sauce, but was horrified to find there were only 3 small b&b pickle chips in the jar, plus one itty bitty at the bottom.
We had no sweet relish!
So I chopped those, mixed some mayo and a little regular yellow mustard, added a splash of juice from the pickle jar and it worked.

About how much herbs did you use?

Peeps, I just dumped some of each in a small bowl, mixed them with my finger tips, then measured out 2 T.
So they were mixed.
Any mix will work.
If I'd had a bottle of Herbes de Provence, I probably would have used that.
