I love roasting fresh vegetables! As much for the easy clean-up (no pan to wash if you use Pam'd foil) as for the flavor.
These were very good. Carmelized on the bottom, seasoned on the top.

Roasted Zucchini Slices
. Pam a foil-lined cookie sheet, Arrange slices in a single layer. Drizzle with olive oil and spread it around the slices with a pastry brush. Turn over. Sprinkle the tops with seasoning of your choice, then with Parmesan cheese. Bake, uncovered, at 350 degrees F for 35-40 minutes or until golden brown.

- olive oil
- Italian seasoning or pizza seasoning
- 1/4 cup grated Parmesan cheese
- salt and pepper to taste
