HILLBILLY CHOP SOOEY

6 strips bacon; cut into 1-inch pieces
3 cloves garlic, minced
1 large yellow onion, diced
1 green bell pepper, cored and diced
1/4 tsp each, parsley, sage, and thyme seasonings
1/2 tsp dried pepper flakes
1 pound lean ground pork (or beef)
1 (14.5 oz) can diced tomatoes
1 (15 oz) can tomato sauce
1 c. chicken broth
1 1/2 tsp soy sauce
2 c. elbow macaroni (uncooked)
salt and pepper to taste

In a large skillet, over medium-high heat,cook the bacon for about 2 minutes, or until it renders enough fat to lightly coat the pan.
Add the garlic, onion, bell pepper, and seasonings and pepper flakes to the pan and cook till the onions just begin to soften, about 5 minutes.
Increase the heat to high. Add the meat and saut'e, breaking up with a wooden spoon, until lightly browned, about 5 minutes. Mix in the diced tomatoes, tomato sauce, chicken broth, soy sauce and elbows.
reduce heat to a simmer, cover and cook until the macaroni is tender, stirring occasionally, about 14 minutes.
Season with salt and pepper at table (and a dash of hot sauce in your individual bowl doesn't hurt, neither!)
