Who cooks Patty Pan Squash?

I bought a couple of small ones to try for the first time - I wanted to grill them with my steak.

I just cut the top and bottoms off, and removed the seeds, not realizing that they really were okay to leave in.

Brush on some olive oil, s & P, fresh herbs, and grilled 6 minutes on each side.

Pretty much like summer squash.

Anyone else cook these things?

We've cooked the baby ones with baby zuchs, just sauteed them in butter/oil whole with salt and pepper. Never seen any that big.

they get pretty big - these we slice up like a pie wedge & roasted - or thick 'steak' type horizontal slices and pan-fry

Wow, CM, did you grow those???

Do you leave the skin on and seeds in, like summer squash?

yup. they're quite prolific! I have about 1000 sq ft for veggies -

at that size the skin is no longer tender - never peeled them tho - bake&scoop like acorn/butternut or slice off top&bottom for a 'squash steak' - I leave the seeds, except if the center has gone stringy - those I actually discard.

when still small - 2"ish - the skin is still tender and you can treat them like zucchini
