Pineapple carrot salad

My mom used to make this for me, and I loved it.

1 large or 2 small boxes of orange jello
1 large can of crushed pineapple (about 14 oz), drained, juice reserved
1 cup grated carrots

Prepare Jello as called for on package, except use reserved juice for part of the cold liquid. Stir in pineapple and carrots, pour into 9X13 dish and chill until jelled.

I also liked lime jello with pear halves, using the pear juice as part of the liquid. (Use 1 large lime Jello, a large can of pears, and reserved juice as above.)

Wow, my Mom used to make that for us when we were kids as well (back in the 60's). We LOVED it! The carrots gave a great texture variant and were tasty as well. She also used many different canned fruits in Jello as a light and fruity dessert in the Summertime. Thanks for the trip down memory lane.

My girls were growing up in the 60's. Memory lane, no kidding!
