I've only had duck a couple of times in my life, and actually enjoyed it.

I've been reading a lot about this cooking method lately. Seems like everybody is jumping on the sous vide wagon. There's even a method out there for using a cooler as a cooker. His duck does look good!

I was looking at sous vide equipment at Christmastime. The small home version of the circulator sells for $450. I sure can't afford that right now.

Those that I know of that have tried it use a vacuum, like a professional version of Food Saver. I think if I were to try his stove top version, I'd use the Food Saver instead of the freezer bag - less chance of leaking.

I may try this, but not with duck. I like the rendered duck fat when I saute it.
