so I got a couple bison steaks - 6 ounce.
it's lean stuff - any tips / tricks / alerts / tat's?

you'd need a side-by-side to tell the diff from beef methinks. at least with that cut.
and btw, check the numbers on the "but it's leaner" claims - not all cuts are the same, and a 90/10 ground mix has the same fat as 90/10 ground beef, for example.


had a good taste - it is more expensive

Yup !
Quite an "Uptown" price..... Buffalo Rib-Eyes at Giant - 20 bucks per pound...
Filet Mignon at the butcher is a dollar less...
