As I've said before, there is a sub shop on every corner in my area.
On almost every menu, there is an Egg and Potato sub. I've never tried one. Might be a New York thing.
But I had part of a loaf of French bread and two leftover baked potatoes, so thought I'd try my hand at one this morning.
Kinda bland, so I put some ketchup on the bread. I will keep trying. Maybe next time, cook the onions less.
Anyone ever make these? Suggestions?

Egg and Potato Sub
1 T. olive oil
1/2 baked potato, cubed
3 T. thinly sliced onion
2 eggs, whisked and seasoned with salt and pepper
hunk of French bread
Heat oil in a small non-stick skillet. Add cubed potatoes and brown them a bit. Add onions and cook for a minute. Add eggs and cook until just set. Fold omelet over to fit in French bread.
