Chicken Caesar Wraps

Dressing (For 8 wraps):
4 garlic cloves
2 anchovy fillets
2 tbsp mustard
1 tsp Worcestershire sauce
3 egg yolks
1 cup olive oil
Juice of 1 lemon
1/2 cup freshly grated parmesan cheese
Salt and pepper to taste

For each wrap:
1/4 cup chopped romaine lettuce
1/8 cup chopped tomatoes
1/3 cup croutons
1 12 tortilla wrap
1 crisp-fried boneless chicken cutlet, still warm
1 sliced of cooked bacon
1 hard boiled egg-chopped

For the dressing, in food processer pulse to a paste the garlic, anchovies, mustard, Worcestershire sauce, and egg yolks. Gradually drizzle in the oil, while continuously mixing, then add the lemon juice, parmesan, and salt and pepper to taste.

Mix a couple of tablespoons of dressing with the lettuce and tomatoes. Spread this mixture out on the wrap.

Crumble the croutons and bacon into rough pieces. Spread on lettuce and tomato. Top with egg.

Slice the chicken cutlet into strips about 1/3-inch wide and lay strips across the lettuce and tomato mix.

Wrap the sandwich tightly. Cut in half to serve.
