Vidailia onions are coming into season again!!! YAY!!!
1C crushed butter flavored crackers (like Ritz)
1/4C butter melted
3C chopped Vadalia onions
2Tbsp butter
2 eggs
3/4C milk
1/2tsp salt
1/4tsp pepper
1C shredded cheddar cheese
Combine the crushed crackers & 1/4C melted butter, mix well. Press into a greased 9in pie plate, set aside. Saute onions in 2Tbsp butter until tender, spoon into crust. Combine eggs, milk, salt, & pepper, mixing well. Pour milk/egg mixture over onions. Sprinkle cheese over top. Bake at 350F for 30 minutes.
