Don't even have a clue! We have to drive into Vallarta to see a friend in the hospital. Will probably stop at Sam's Club and I'll see what kind of meat they have and maybe go from there.

I have family and friends coming over this evening so I'll be doing 2 racks of baby back ribs, 2 racks of beef back ribs, 1 tri-tip, chicken wings, corn, baked potatoes, and 2 loaves of banana bread. They'll all be thrown in the outdoor wood oven.

WOW! What time should I be there??????

I can rarely find tri-tip here, and always snag them when they are present. The last one I grabbed I took pics and posted here so I can always go back and remember it! So good! :yum:

Enjoy yours!!

Bought some nice deli ham, turkey and salami at Sam's Club, plus some nice soft sandwich rolls, tomatoes, lettuce and avocados. We'll be having cold cuts/sandwiches, with some leftover broccoli/cauliflower salad from last night. NO heating the kitchen today.

I have several choices for tonight and haven't decided yet. I just put some pinoy pork on to marinate for tomorrow. Gee that stuff smells good :bounce:.

Heading out to see Joan Jett over at the casino. I'm thinking dinner will consist of tooth crackin' cold Coronas with Jager Bombs on the side!!

I guess this could count as a family favorite  I have some homemade pesto in the fridge; we're planning to cook some rotini and mix it with the pesto and grilled chicken, with a green salad on the side. Pix to come.

Linguine topped with meat and mushroom sauce (ground beef browned with olive oil, chopped onion, minced garlic, chopped fresh mushroom caps, dried porcini mushroom powder, fresh basil, fresh oregano, sea salt, ground peppercorn blend, thyme, rosemary, ground red pepper flakes, tomato puree, tomato paste, pinch sugar, pinch each beef and chicken bouillon powder and burgundy wine) and fresh grated parmesan and romano cheeses. Tomato and mozzarella salad (chopped tomato, cubed mozzarella, fresh onion, fresh garlic clove mashed with salt to paste, ground pepper, fresh basil, fresh oregano, olive oil and red wine vinegar) on the side.

Nice looking dinner Peeps!

REALLY HOT here so I grilled wings, packet potatoes (sliced potatoes, onion, cream of celery soup, salt, pepper, garlic powder and shredded Mexican Blend Cheese) and mixed veggies. I made our family favorite dessert also...

Oh, so many yummy dinners! The pasta looks wonderful, plated with the tomato salad, the wings(!) look delicious, and Sass, it looks like your chicken is succulent. We had cold leftover roast chicken and the rest of the broccoli/cauliflower salad, which unfortunately turned an unappetizing shade of gray overnight in the frig. Oh well...we ate it anyway. Problem was, I lightly steamed the broccoli and cauliflower, and then did not let it cool sufficiently before I added the grated cheddar cheese. Don't ever do that.

Tri-tip: FAIL... Ribs: AWESOME

Thanks!

Tri-tip fail....well, not quite. Due to the low oven temp resulting in no crust I ended up having to reverse pan sear it but bringing it up to temp (pulled at 135) at the lower smoking temp produced one of the tenderest tri-tips I've done so far. This was mostly an experiment so the only prep I did were to poke it all over and marinate it in whatever I had on hand at the time which was some old teriyaki mainade. Besides, I got these on sale at $2.47/lb. ...:p :D

The ribs, on the other hand were the bomb! The chicken wings were decent, done under smoking temps, but they took a bit too long.
The loaves of banana bread were good earlier in the day.

I'm still getting the hang of oven heat management, as the oven temp petty much dictates what I can cook in it.

Other than that, my wife said I did good.

Oh my gosh, that all looks amazing, FooD. How many lucky people did you feed? The banana bread looks perfect, and so does everything else. I am really impressed. Great job.
