This is a cheese most common to northern Mexico. It is a dry, crumbly cheese from cow's milk. If you've never tried it and there's a Latino market in your area it is worth the visit. Queso seco "dry cheese" is mild flavor, slightly salty almost resembling cheese curds. It is great on salads, of course tacos and burritos and in soups.
