Preserving Fresh Basil

I have been doing this for several years now, and it works great. Quick and easy, too :smile: Quantities are approximate.

4 cups fresh basil, stemmed and rinsed
2 cups water

Put basil in blender and pour water over; you may need a bit more water. Run the blender till the basil is finely minced. Spoon the mixture into ice-cube trays and freeze. Pop the basil cubes out of the trays and put in freezer bags. Keep in the freezer till you need them. These are great for adding as is (no thawing necessary) to spaghetti sauce, minestrone soup and any soup or stew that contains tomatoes.
