Beef Stroganoff Casserole

1 lb. ground beef
salt and pepper
vegetable oil
8 oz. sliced mushrooms
1 large onion, chopped
2 cloves garlic, minced
1/4 cup white wine
1 can cream of mushroom soup
1/2 c. sour cream
1 T. Dijon mustard
4 c. cooked egg noodles
Chopped fresh parsley, for garnish.

Preheat oven to 350F. Spray 13 x 9 baking dish with cooking spray.

Brown ground beef in skillet until no longer pink, season with salt and pepper. Drain and set aside.

Heat oil in same skillet until hot. Add mushrooms, onion and garlic and cook until onion is tender. Add the wine and reduce heat and simmer. Remove from heat and add soup, sour cream and mustard until combined. Add the beef back in.

Put cooked noodles in baking dish, pour beef mixture over noodles and stir until noodles are incorporated.

Bake uncovered for 30 minutes or until heated through.
