Okay, so for breakfast, serve these on top of poached eggs on toast, with a little Hollandaise!

Andy great idea. I like bacon and I like asparagus. How can you lose. Gonna give it a try for sure, soon as the Price of asparagus comes down. $5.95 pound yesterday.

I do cure and smoke my own bacon but am needing to cure more soon. We are getting low.
Will be checking prices for pork belly in a few days. Most of the time I buy from our Mexican store. With all the restaurants pushing pork belly gourmet food the price will be high I am sure. I think the last I bought was $2. something pound, skin on frozen 4 belly's to a box. I like my homemade bacon much better than store bought. CF

After this heat spell is over I have some slab belly to smoke. I was going to use it for jaternice but will wait till winter to do that.

Johnny good to see you posting.
I have 2 sides curing right now They will finish on 7-1-2015. I am using the dry cure method. Going to rub them down with course black pepper before smoking them with hickory. CF
