Mushroom Melt

This is my new favorite grilled cheese sandwich.

1T. butter
1T. Olive oil
2 shallots, sliced (or 1 small onion)
8 oz. mushrooms, any kind you like or a mixture of several
2 cloves garlic, minced
1 tsp. thyme
1/4 cup white wine (or chicken broth)
salt and pepper
1T. parsley, chopped
1 cup Fontina or Gruyere, shredded
1/4 cup Parmigiano, grated
4 slices bread (I used homemade sourdough)

Melt butter and oil over medium heat. Saute the onions until tender. Add the garlic and thyme then add the mushrooms until caramelized. Add wine/broth to deglazed the pan until liquid is evaporated. Season with salt and pepper and add the parsley. Take off heat. Mix in the cheeses.
Butter one side of each slice of bread and put in pan.Top each slice with the mushroom mixture and top with other slice of buttered bread. Brown on both sides til golden brown and cheese is melted.

Ooey, gooey goodness!

That looks fantastic!

Autocorrect did some numbers on you in there. I'm pretty sure I don't have to salute the cheese :biggrin:.
