"Green Eggs & Ham Frittata" - Today is Dr. Seuss's Birthday!!

In honor of Dr. Seuss, last night I made my own adapted rendition of "Green Eggs & Ham Fritatta". It was delicious! (His birthday is officially today, but we're slated to dine out tonight.)

Breezy Green Eggs & Ham Frittata
Ingredients
· 8 large eggs
· Approx. half a cup fresh dill, stemmed & chopped
· A few grinds sea salt
· A few grinds ground pepper
· Approx. 2 tablespoons extra-virgin olive oil
· One small sweet onion,peeled & diced
· 1 6-ounce bag baby spinach
· Two 1”-thick slices turkey ham (I use Jennie-O brand), diced
· Aprox. 2/3 a pound Havarti cheese, shredded
Preparation
1. Position rack in upper third of oven & preheat to 450°F.
2. Whisk eggs, chopped dill, salt and pepper in a medium bowl. Heat oil in 10” or 12” cast-iron skillet over medium heat. Add onion & cook, stirring occasionally, until softened, but NOT browned. Fold in spinach, & then continue gently folding & stirring, until the spinach is wilted down. Fold in diced ham.
3. Pour the egg mixture over the vegetables and cook, lifting the edges of the frittata so uncooked egg can flow underneath, until the bottom is light golden & the eggs are set to you liking.
4. Sprinkle Havarti cheese on top & transfer the pan to the oven, baking until the cheese is melted & bubbling. Remove from oven & allow to rest a little while before cutting into wedges & serving.
I served this with buttered Rye Bread Toast & a green salad.
