3 c shredded carrots
1 c water
2 c long-grain rice- (cooked according to package directions)
1-1/2 c shredded cheddar cheese
1 c milk
2 eggs, beaten
2 T minced onion
1 t salt
1/4 t pepper
Cook carrots in the water for 10 minutes, then drain.
Combine the carrots with the rice, 1 c of the cheddar, add milk, eggs, onion, salt and pepper.
Place in buttered casserole dish, and top with remaining 1/2 cheddar.
Bake, uncovered at 350 for an hour.
