Beef Brisket Sandwiches w/bbq sauce

1 lb brisket, trimmed
1 1/2 teaspoons coarse sea salt
3/4 teaspoons pepper
1 tablespoon vegetable oil
1 large onion, coarsely chopped
1 1/2 tablespoons garlic, minced
1/2 cup dark beer, (such as porter or stout)
1 tablespoon Worcestershire sauce
2 tablespoons lemon juice
3 tablespoons honey
1/2 cup ketchup
1 teaspoon paprika
8 kaiser (or other sandwich) rolls

Sear the brisket on all sides in a skillet on medium heat

When brisket is seared, transfer to a crockpot

Add the remaining ingredients to the slow cooker and stir well.

Slow-cook, covered, until the meat is very tender -- 8 hours.

Remove the meat, place it on a cutting board, and let it rest for 15 minutes. Reserve the sauce.

Carve brisket into thin slices and divide it among kaiser rolls topped with reserved sauce.

Serve warm.

Hmm sounds great! So sliced not pulled, well I will do my best to slice it thin, LOL. Funny thing is I have a bread knife that actually slices better than my chef knife!
Would it offend if I topped with some mild cheddar? Or throw the taste off too much?

nope you can put whatever you want on it

as for your electric knife... most people who i know that bbq use one for carving brisket

thin to me is 1/4" thick..lol
