Italian Stuffed Chicken Breast

3 pounds of boneless skinless chicken breast
4 ounces of cream cheese
1/2 cup of mozzarella cheese
1/2 cup of Parmesan cheese
8 ounces of frozen spinach, thawed and all of the water squeezed out.
1/2 teaspoon of kosher salt
1/2 teaspoon of pepper
1/2 teaspoon of garlic powder
1/2 teaspoon of onion powder
1 teaspoon of italian seasoning
2 eggs, slightly beaten
1 cup of Italian bread crumbs
peanut oil for frying
1 pound of egg noodles, cooked and drained
1 jar of spaghetti sauce (The only jarred spaghetti sauce I use is
Prego three cheese)

In a medium bowl, combine the cream cheese, mozzarella cheese,
Parmesan cheese, salt, pepper, onion powder, garlic powder and

Italian seasoning. Add the spinach and mix well.


This is what it should look like:

Place each chicken breast between two pieces of
plastic wrap and pound until it's thin:

Remove the plastic wrap and fill with desired amount of filling:

Carefully roll each chicken breast up:

Coat each chicken roll in the egg mixture and then
coat with the bread crumbs:

Fry in hot peanut oil, turning to brown all sides.
Remove from oil to cookie sheet.
Bake in a 350 degree oven foe 20 to 25 minutes until
chicken is cooked through.

Allow chicken rolls to rest for about 5 minutes.
Slice and serve on top of egg noodles covered with spaghetti sauce.

That is almost exactly what I have been hungering for for several days now .... chicken, cheese and spinach .... those will be done tomorrow !!! It's my birthday, after all, so I need to treat me special. Thanks for the idea.
