Leek & Potato Soup

Ingredients

25g butter/margarine
2 cloves garlic – adjust for personal taste
3 large leeks
450g potatoes
2 tsp parsley
1 tsp oregano
Bay leaf
850ml vegetable stock
Salt & pepper
200ml single cream - omit for a healthier soup
100g grated smoked cheese




Method
1. Peel the potatoes and cut into bite sized chunks. Slice the leeks and chop the garlic.
2. Melt the butter (medium heat), and gently fry the garlic for 1 minute. Ad the leeks and cook, stirring, for 2 minutes.
3. Add the potatoes, 1tsp parsley, the oregano, bay leaf & stock. Bring to the boil.
4. Simmer for 25minutes.
5. Cool for 10 minutes, remove the bay leaf and liquidise. Add the cream and reheat gently. Just before serving, stir in the cheese.
