I had forgotten how much I love this salad until I made it again last night. This pic is from the first time that I made it. I used Uncondrum's recipe (Recipes on Rails http://www.recipesonrails.com/recipes/689) but subbed basil for the mint.
I made it again last night but left out the mint (I never have mint on hand).
Tis very good and pretty healthy too...all those flavors together just pop in your mouth.
