This is a dish my DIL made as part of her Keto diet plan.
3-4 lb pork loin
Bacon grease
Cabbage leaves
Jack cheese
-----
Prepare pork loin day before roasting @ 350° for approx 3.5 hrs.
Slice pork in 2" pieces then lay slices of Jack cheese on top.
Wrap in cabbage leaves,securing with toothpicks.
Place in 13x9 baking dish drizzling bacon grease between the rolls.
Bake @ 350 covered in foil for 1 hour.
If not following the diet plan, tomato sauce can be added prior to baking the rolls.
