1 lb. ( ½ kg) ground beef
1 packet of taco seasoning
2 – 16oz (500ml) can of refried beans
1- jar of salsa
16 small corn tortillas (you can use flour)
4 c. of cheddar cheese
1 – 12oz can of corn
2 green onions, chopped
2 tomatoes chopped
Sour cream, guacamole, salsa to garnish
optional ingredients:
black olives
***garlic and onions cooked with the ground beef
***add half a jar of salsa when ground beef is cooked
Preheat oven to 375*
In a large skillet cook ground beef, drain.***
Combine with taco seasoning and refried beans.
Spread salsa on the bottom of the pan.
Add a layer of corn tortillas
Spread ½ of bean and meat mixture on top
Add a layer of cheese
repeat layers until layers until all is gone
Cover with a thin layer of salsa and/or cheese
Cover loosely with tin foil,Cook until cheese is bubbly and warm in the middle-- about 30 minutes
Top with green onions and tomatoes.
Serve with sour cream and guacamole
