Roasted Potatoes with Green Peppers



2 pounds potatoes, peeled, lg. dice

2 TBL olive oil

1 1/4 tsp sea salt

3/4 cup chopped green bell pepper

3/4 tsp Hungarian paprika

1/2 tsp garlic, minced

1/4 tsp cayenne pepper

1/4 teaspoon thyme



Pre-heat oven to 450.

In a large bowl, add potatoes and olive oil; mix until potatoes are coated. Place potatoes in a 13x9x2-inch baking pan. Sprinkle with seasonings and toss to coat well. Roast for about 35 - 40 minutes or until done. (Poke 'em with a toothpick)
Turn or stir potatoes 2 to 3 times during the cooking time.
