Smoked Catfish

Today, I need something for dinner and I wanted to incorporate my new friend the WSM. I made smoked Catfish.

I used this recipe

For my purposes, all spices were fresh.

I cut the Cayenne down to 1/4 tsp in the Orange dill sauce.

Here is the Catfish soaking in the buttermilk.

Here is the spice mix to put on the fish before smoking.

I doubled the recipe for the seasonings for the fish.

Here they are after being patted dry.

All spiced and ready for the smoker.

Thank you both. CF fish smoke quickly, an hour at 250 degrees did it. The recipe that I posted has directions for smoking in the kettle grill. I used that for the veggies and did the fish in the WSM.
