Default Cure 81 Ham

I did a Cure 81 spiral cut ham for Christmas dinner - followed the directions on the ham and used their glaze packet. It came out pretty good. I made Julia Child's potatoes dauphine and they were a hit as well.

and the potatoes... it was strong flavored with the thyme and if I ever do these again I'll cut back on the thyme but no one seem to care but me.

thyme . . . !!metoo both thyme and rosemary I cut by 2/3 or leave out altogether. they can easily overpower a dish.

The ham had pumpkin spice in it and would only want that during Thanksgiving or Christmas. Any other time I'd prefer the mrs pineapple brown sugar glaze. I'll do one again for Easter, I'm sure.

We had a tonne of food - the lady next door brought us over a raspberry pretzel jello that was just excellent. She's a retired home ec teacher.
