Fettuccine Alfredo
This recipe goes together very quickly.
Ingredients:
12 oz fettuccine
2 cups 1 percent milk
1/3 cup flour
1 bay leaf
2 cloves garlic, crushed
1/2 cup grated Romano
1/4 cup grated Parmesan
1/4 t salt
1/4 t white pepper
pinch of nutmeg
2 T sweet butter
1/4 cup chopped flat leaf parsley
Directions:
Cook the pasta according to package directions. Meanwhile, whisk together the milk and flour in a medium saucepan, until the flour is blended. Add the bay leaf and garlic and cook over medium hear for 8 minutes, stirring often with a wooden spoon, until mixture becomes slightly thickened. Strain, clean pan, put white sauce back into pan. Add both grated cheeses, salt, pepper, and nutmeg until cheese completely melts. Drain pasta, transfer to a large bowl. Toss pasta with butter and parsley, then stir in cheese sauce and toss. Or serve pasta and spoon sauce on top. Sprinkle with extra cheese if desired. Serve immediately.
