PASTA CARBONARA

This is my recipe... Pasta Carbonara, which was just published
in the Taste of Home's Simple & Delicious Magazine.
It can be found on page 29 in the May/June issue.


PASTA CARBONARA

2-1/2 cups uncooked mostaccioli
8 bacon strips, diced
1 jar (4-1/2 ounces) whole mushrooms, drained
3/4 cup half-and-half cream
1/3 cup butter, cubed
1 teaspoon dried parsley flakes
1 teaspoon minced garlic
6 to 8 drops hot pepper sauce
1/2 teaspoon salt, optional
1/3 cup grated Parmesan cheese
1/4 cup sliced green onions

Cook mostaccioli according to package directions.

Meanwhile, in a large skillet, cook bacon over medium heat until crisp.
Using a slotted spoon, remove to paper towels to drain.

Brown mushrooms in drippings; remove to paper towels.
Drain drippings from pan.

Add the cream, butter, parsley, garlic, pepper sauce, and salt if desired to the skillet.
Cook and stir over medium heat, until butter is melted.

Drain mostaccioli; add to cream mixture.

Stir in the bacon, mushrooms and cheese; heat through.

Remove from the heat. Sprinkle with green onions.

Yield: 4 servings.

ohhhhhh my favorite pasta dish.... gonna try your recipe because quite frankly my recipe sucks..lol

a different variation is using panchetta..oh nummy nummy

The DW and I were just wondering why we never made that before. Espescially with me being a pasta freak. Did you ever cook the classic version? We saw Anne Burrell make it over the weekend, looks great.

These are the reasons I haven't made it anyway.....

you can use subtitutes...

non fat cream cheese plus a little non fat either yogurt or sour cream
you can cut out the butter all together or the missus uses an omega spread.

whole grain pasta
cut the bacon down and just put a few bacon bits in it and a drop of liquid smoke

High Cheese, no, I haven't prepared the classic version. I bet it's quite delicious! It's been quite some time since I've cooked on my own, especially since I had a stroke which affected my vision. So, I mainly cook with my husband, but I do get adventurous when it comes to baking different things.

BamsBBQ, thank you for your helpful suggestions to try. I haven't prepared this main dish for quite some time, but when I do, I'll keep your suggestions in mind.​

I made this tonight and it WAS easy and delicious! I had to use angel hair as it's one of two pastas that Dad now likes (the other being elbow macaroni).
