Rice Paper Spring Rolls

I may make these as a nibble for Thanksgiving w/ crab or shrimp & avocado (just to whet the appetite - don't want anything bready or heavy), or for leftover turkey etc. Any other ideas for filling(s)?

I've had them filled with noodles, shrimp, fresh vegetables and aromatic herbs and combinations including some even using ham, ground beef and ground pork all pre-cooked if needed before stuffing. I like them steamed better than the fried type myself.

Thank you for the ideas, Joe. I had planned on eating them raw. Some ingredients I have in mind:

Shrimp and/or crab
lime juice
avocado
green onions/scallions
mint and/or cilantro
Peanuts
hoisin sauce
