***Quick Help Needed (substitution) question***

I am making chicken fingers.

I usually take the chicken and put it in flour, then go to the egg wash and finally the bread crumbs.

My question is I only have a little flour, can I add corn starch to extend the flour???

Yes, I think you can, especially if you are frying. I've seen many recipes, especially for Chinese chicken (General Tsao;s, for example) that coat the chicken with cornstarch. I somehow don't think it would work as well, though, if you baked the chicken. You can also use Bisquick or pancake mix.

keep cookin! people often use cornstarch in thier standard breading procedure.
