Funnel Cakes

3 eggs
2 cups of milk
1/2 cup of sugar
3 cups of self-rising flour
1 teaspoon of vanilla
vegetable oil for fying
powdered sugar for dusting
cinnamon sugar for dusting (1/4 cup of sugar and 1/2 teaspoon of cinnamon)

In a large bowl, cream together the eggs, sugar, milk and vanilla.
Add the flour a little at a time mixing well between each addition.
The batter will need to be thin enough to run through a funnel.
You may need a little more or a little less flour to get the right consistency.

In an 8 inch skillet, heat vegetable oil to 375 degrees F.

Hold your finger over the bottom of a funnel and pour 1/2 cup of batter into the funnel.
Hold the funnel close to the oil and remove your finger.
Move the funnel in a circular motion so that the batter is spread around in the pan.
Carefully turn the cake over with metal tongs or a metal spatula and brown the other side.
This will take less than a minute.
Drain on paper towels and dust with powdered sugar, cinnamon sugar or top with your favorite pie filling!
**When I make funnel cakes, instead of using a funnel, I fill and empty ketchup bottle with batter and squirt it into the oil.
I just eye-ball it to get the right amount!
Much easier than using a funnel.

YAAAA-HOOO! I love these things! I can only get them at the “Fair” (once a year). And good Lord they are going for 6 bucks or more these days….but worth it for a Fair trip!! :yum:

DW was just asking why no one posted a Funnel Cake recipe! Unreal! Someone around here is psychic!

Love funnel cakes!!!! And the ketchup bottle is a very good idea! I can save the one we have, just have to make the opening in it larger as it has a thin stream right now.

You may not need to make the hole bigger Mav. The batter expands when it hits the oil.

That's an interesting recipe Bams...looks like it would be a thick batter...have you tried it?
