Chorizo and Black Bean Soup

1lb Dried Black Beans, soaked overnight and boiled as directed and drained (canned would be fine)

Dried Spanish chorizo, diced (maybe 1/2 cup or more)
1 sweet onion (Spanish, Vidalia, etc), diced
3-4 cloves Garlic, diced
Red Bell Pepper, diced
Fresh Jalapeno Pepper, 1-2, or to taste
Lime Zest, approx 1 Tbs
15 oz can diced tomatoes
1 lg box chicken broth(around 4 cups)
Juice of 1 Lime
Oregano, to taste
Chili Powder, to taste
Salt and pepper, to taste

Fresh Cilantro, chopped
2-3 scallions, sliced on a bias
sour cream, warmed to thin

In soup pan:

Saute chorizo to brown and crispen, remove from pan, leaving behind drippings

Saute onion to soften, approx 5 minutes

Add garlic, bell pepper, jalapeno and sauté a few more minutes

Add lime zest, sauté until aroma released

Add diced tomatoes, bring to boil

Add Chicken broth, bring to a boil

Squeeze lime juice into soup

Add beans (you may not need the full amount
)
Add chili powder and oregano. Use sparingly, so flavors don’t overpower the dish

Boil for 10 or so minutes to allow flavors to meld. Adjust salt and pepper
Near end of boiling, add cilantro, to taste. Boil another 5 or so minutes

Ladle into bowls, garnish with cilantro, scallion and sour cream
