Paula Deen's Tomato Pie

Peep and Saliha have both posted some lovely recipes for tomato pies, but I happened to have all the stuff to make this one, but I subbed a half onion, thinly sliced, for the green onions.

The basil was totally lost in this dish! Would never know it was there.

I topped the pie with some of my fresh marjoram, oregano and chives and I could taste those, but not the basil.

Suggestions as to what to do next time to taste (and even SEE) basil? Just add more?

Otherwise, it was delicious (of course, it's Paula Deen!) - served with Brown & Serve sausages and wilted lettuce salad.

Hard to present it as a wedge of pie when I cut it hot, but what the heck.

Paula Deen's Tomato Pie

4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
1/2 cup chopped green onion (or half an onion, thinly sliced)
1 9-inch pre-baked deep dish pie crust
1 cup grated mozzarella
1 cup grated cheddar
1 cup mayo
salt and pepper


  • Preheat oven to 350 degrees F.
  • Place the tomatoes in a colander in the sink in 1 layer. Sprinkle with salt and allow to drain for 10 minutes.
  • Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Combine the grated cheeses and mayonnaise together. Spread mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
  • To serve, cut into slices and serve warm.
